Christine: We were aiming for the restaurant in the Colony at 121 and Josey that we both remembered had “Egg” in the name. It turned out to be Jimmy’s Egg of Oklahoma fame. 

Our very enthusiastic waitress was a breakfast connoisseur. She had recently checked out the local competition at IHOP around the corner. Her breakfast there was so bad she returned it and told the waitress to feed it to her dog. Great food and great service at Jimmy’s Egg. 

We sat by the front door enjoying the chilly breeze on a cold Texas morning as the door hung open to accommodate numerous customers crowding into the small entryway waiting for a table.

Vickey:  This was my first Saturday back in Texas after Christmas and my mothers passing.  It was good to see Christine, catch up and deliver her Christmas gift.   I was familiar with Jimmy's Egg from Oklahoma.  It is new to Texas and this location happens to be only a couple miles from my house.

Not knowing what to order we asked for recommendations from our waitress, and boy did we get a story.  She was a character, and a good judge of the breakfast menu.  My breakfast was wonderful.  My omelet had mushrooms and spinach and lots of other good veggies.

I would go back!
